Smoked Guacamole

If you’ve never smoked your guacamole base, this is your sign.

Smooth, smoky, and loaded with flavor, this guac gets a bold twist thanks to P&L Fajita Bold Seasoning. Once you taste the depth a little smoke adds, you’ll never go back to the basic stuff.

Why Smoke Your Guacamole?

Smoking the avocados, tomato, onion, and jalapeño brings out a subtle char and natural sweetness that balances perfectly with lime and spice.

You’re not cooking them to mush just enough to get that light wood-fired flavor we all crave.

Ingredients:

  • 3 ripe avocados, halved & pitted
  • 1 roma tomato
  • 1 small red onion (thick slice)
  • 1 jalapeño (or 2 if you like heat)
  • 1–2 tsp P&L Fajita Bold Seasoning
  • Juice of 1 lime
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp olive oil
  • Optional: 1 smoked garlic clove, pinch flaky salt

Step 1: Smoke the Base

  1. Preheat smoker to 225–250°F — fruit woods like pecan or apple work great.
  2. Brush avocado halves lightly with olive oil.
  3. Place avocados, tomato, onion slice, and jalapeño directly on grates.
  4. Smoke for 30–45 minutes until softened and lightly charred.
You're going for soft and smoky — not mushy.

Step 2: Chop & Build Flavor

  1. Remove skins from tomato and jalapeño if heavily charred.
  2. Dice everything.
  3. Scoop smoked avocado into a bowl and mash to your desired texture.
  4. Fold in the chopped veggies.
  5. Add lime juice, cilantro, and P&L Fajita Bold Seasoning.
  6. Taste and adjust seasoning.

Competition-Level Upgrade

  • ½ tsp smoked beef tallow for richness
  •  Fresh cotija cheese on top
  • Hot honey drizzle for sweet-heat balance
  •  Diced smoked brisket point for that Texas twist

Pro Tip

Serve it up with warm tortilla chips, smoked queso, or alongside your next brisket spread. Once this hits the table, it won’t last long.
