P&L Smash Burger
Stacked. Seared. Loaded with Beefy Goodness.
🍔 What You’ll Need:
• 1½ lbs 80/20 ground beef (makes 4 double-smash burgers)
• 8 slices American or cheddar cheese
• 4 brioche buns, toasted
• 8 slices thick-cut bacon, cooked crisp
• 1 large yellow onion, thinly sliced
• 1 tbsp butter + 1 tbsp olive oil
• P&L Steaks Rub (base layer)
• P&L Red River Beef Rub (finishing layer)
• Burger sauce: mix mayo + ketchup + pickle juice + hot sauce
🔥 How to Build It:
1. Prep the Onions:
Sauté onions in butter and olive oil over medium heat until golden and sweet. Set aside.
2. Roll the Beef Balls:
Divide beef into 8 equal portions and roll into loose balls don’t overpack them.
Season lightly with Steaks Rub.
3. Smash & Sear:
Heat a griddle or cast iron skillet on high until screaming hot.
Place 2 balls down per burger, let them sizzle for 10 seconds, then smash hard with a heavy spatula or press.
While sizzling, season the top side with Red River Beef Rub for that bold, beef-forward crust.
4. Flip & Melt:
After 1½–2 minutes, flip the patties once you see crispy edges and deep browning.
Add cheese immediately after flipping so it melts right over that seared crust.
5. Stack It Up:
• Bottom bun → burger sauce
• 1 patty + cheese
• Caramelized onions
• 2 slices bacon
• Second patty + cheese
• Top bun brushed with melted butter and a tiny pinch of Red River for showmanship
