Bold Fajita Chicken Tacos

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts (or thighs for extra flavor)
  • 2 tbsp P&L Bold Fajita Rub
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • Juice of 1 lime
  • 8 small flour or corn tortillas

Optional Toppings

  • Sour cream or lime crema
  • Fresh pico de gallo
  • Sliced avocado or guacamole
  • Shredded cheese
  • Cilantro 

Instructions

Grill Option:

  1. Preheat grill to medium-high.
  2. Rub chicken with olive oil and P&L Bold Fajita Rub.
  3. Grill 5–6 minutes per side until internal temperature reaches 165°F.
  4. Let rest 5 minutes, then slice into strips.
  5. Toss peppers and onions on the grill (in a grill basket or foil packet) until tender and slightly charred.
  6. Warm tortillas, fill with chicken, peppers, and your favorite toppings.

Skillet Option:

  1. Heat a large skillet or cast-iron pan over medium heat.
  2. Add olive oil and chicken seasoned with P&L Bold Fajita Rub.
  3. Cook 5–6 minutes per side until golden and fully cooked.
  4. Remove chicken, then add peppers and onions to the same pan. Sauté until tender.
  5. Slice chicken, add back to the pan, squeeze lime juice over everything, and toss together.
  6. Serve in warm tortillas with toppings of choice. 

Serving Tip

Serve with a side of Mexican rice, grilled corn, or a squeeze of fresh lime over the top.
