Bold Fajita Chicken Tacos

Ingredients
- 1 ½ lbs boneless, skinless chicken breasts (or thighs for extra flavor)
- 2 tbsp P&L Bold Fajita Rub
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- Juice of 1 lime
- 8 small flour or corn tortillas
Optional Toppings
- Sour cream or lime crema
- Fresh pico de gallo
- Sliced avocado or guacamole
- Shredded cheese
- CilantroÂ
Instructions
Grill Option:
- Preheat grill to medium-high.
- Rub chicken with olive oil and P&L Bold Fajita Rub.
- Grill 5–6 minutes per side until internal temperature reaches 165°F.
- Let rest 5 minutes, then slice into strips.
- Toss peppers and onions on the grill (in a grill basket or foil packet) until tender and slightly charred.
- Warm tortillas, fill with chicken, peppers, and your favorite toppings.
Skillet Option:
- Heat a large skillet or cast-iron pan over medium heat.
- Add olive oil and chicken seasoned with P&L Bold Fajita Rub.
- Cook 5–6 minutes per side until golden and fully cooked.
- Remove chicken, then add peppers and onions to the same pan. Sauté until tender.
- Slice chicken, add back to the pan, squeeze lime juice over everything, and toss together.
- Serve in warm tortillas with toppings of choice.Â
Serving Tip
Serve with a side of Mexican rice, grilled corn, or a squeeze of fresh lime over the top.
